We spend some time talking with Mark Olsen about his new SOHO Food Park and his new Shaved Ice Business that he made the anchor store for his ever changing product offering. The concept of the Food Park was to allow Food Trucks to arrive nightly, offering multiple options to a fun and anticipating crowd. But to touch on some of those basics, he wanted to have a large, open stand where the public could view them making shaved ice from such an amazing block ice shaver. He also wanted people to be able to see that his employees were clean, sanitary, and professional. He wanted to have a building that was unique, clean, contemporary, and could draw a crowd on its own aside from the attraction of the Food Park itself. “This is our Anchor Store,” he would tell us with enthusiasm. Mark mentions that everyone who comes for dinner also purchases a shaved ice, so it is great for everyone involved at the park.
